From Costa Rica, Alejo Castro is our longest-standing partner. On all of his farms, we are testing all of the new agricultural practises we have developed from the research in our climate controlled greenhouses, directly in the field.
This lot of SL28 comes from his highest altitude farm 'Volcán Azul' and explores our Induced Shade System. Our induced shade ensure a longer and more uniform ripening and a higher density to elevate this coffee to the next level - culminating this year by winning the 2nd place at Cup of Excellence in the washed category in Costa Rica.
The cherries were picked at peak ripeness and after 1 day of resting to soften the tissue completely depulped. The coffee was then dried in african beds for 16 days before finished in mechanical driers at low temperatures.
The result is a modern version of the SL28 variety with a distinct blackcurrant-like fruitiness followed by soft white florals, with a lingering sweetness and a delicate body.
